How to prepare Lobster like a Chef at home

Fresh lobster ready to cook Placing the lobster in a pan of boiling water Removing lobster from water after being cooked
Allow lobster time to cool after being cooked Remove front claws from lobster Use rolling pin to gently break lobster claws and remove meat.

  1. Place a pan of water onto boil when boiling add 10g of salt to 1 litre of water.
  2. Add lobster and cook for 15 minutes per 750g and add another 5 minutes for every 500g.
  3. Remove from pan, cool slightly then remove front claws. Wearing disposable gloves and while still hot crack claws using a cook's knife carefully not to break the meat or use a rolling pin tapping gently to break shell and remove meat.
  4. Using a large knife split head end first towards eyes, then split down to tail end.
  5. Remove all parts form head end and discard, rinse out shell if required.
  6. Remove internal tract from tail end and remove meat from shell and slice as required.
