BBQ King Scallops in Half Shell with Chilli, Garlic and Coriander

Ingredients

  • King Scallops in Half Shell
  • 1-2 chillies
  • 8 cloves of garlic skin on
  • 4 tablespoons of chopped coriander
  • 3 tablespoons of sunflower oil
  • 1/2 lemon
  • Sea salt

Preparation

  1. If scallops are frozen defrost using package guidelines.
  2. Slice chilli thinly, slice each garlic clove into 3 pieces and chop coriander roughly.
  3. Divide chilli and garlic slices evenly into half scallop shells, drizzle with oil.
  4. Chef's Tip - Be careful not to overcook the scallops or they will become rubbery.

Cooking Directions

  1. When BBQ is ready place shells onto bars and cook for approximately 6-8 minutes depending on size and heat from BBQ.
  2. Towards end of cooking (Scallop meat should be opaque in apperance) add chopped coriander, squeeze of lemon juice and a little sea salt.
