Ingredients

  • 250g Moray Seafoods picked white crab meat.
  • 300g linguine, fresh or dried.
  • 1 medium red chilli, finely chopped (Add more chilli if you like it hot).
  • 1 garlic love, finely chopped.
  • 50g butter.
  • 50ml light olive oil.
  • 4 tablespoons chopped coriander.
  • Salt and pepper.

Preparation

  1. If crab is frozen defrost in fridge using package guidelines ready for cooking.

Cooking Directions

  1. Place a pan of salted water on to boil and cook the linguine as per packet instructions.
  2. While the pasta is cooking warm a large pan that is big enough to hold all of the pasta then add the olive oil and butter. Once the butter has melted and started to foam slightly add the chilli and garlic, stirring gently for 1 minute, remove from the heat and keep warm.
  3. Once the pasta is cooked, drain well then add to the chilli and oil mix, mix well making sure that all the pasta is coated in the oil and butter mix. Next add the crab meat and warm through for 1-2 minutes. Finely, add the coriander, mix well then divide the linguine between four bowls.
  4. Serve this dish with either crusty bread or garlic bread and a small sprinkling of grated parmesan cheese.
