Ingredients
- 1 Moray Seafoods Whole Baby Squid.
- 2 medium red chilli, chopped.
- 4 spring onions, finely sliced.
- 1 large garlic clove.
- 2 teaspoon coriander, chopped.
- 50g butter.
- 1/2 teaspoon, vegetable oil.
- Salt and pepper.
Preparation
- If squid is frozen defrost in fridge using package guidelines ready for cooking.
- Remove butter from the fridge and place in a small bowl and soften at room temperature or carefully on a low setting for a few seconds in the micro-wave.
- When soft mix in the chilli, spring onion, garlic and coriander.
- Cut the body of the squid in half length ways, lightly score the surface in a criss-cross style. Cut the tentacles in half.
Cooking Directions
- Preheat a frying pan on a medium-high setting.
- Season the squid with salt and pepper. Pour the vegetable oil in the pan then place the squid, scored side down, and the tentacles in the pan, fry for 30 seconds then add the spiced butter. Chef Tip: Do not over-crowd the pan as this will result in the pieces sticking together.
- Fry for another 30 seconds before turning the squid over, fry for another minute.
- To serve divide the squid between four plates and spoon over the spiced butter.
