  • 1 Moray Seafoods Baby Squid: 4 prepared squid pouches
  • 25ml light olive oil
  • 15g mixed soft herbs
  • Salt and pepper
  • 1 teaspoon sunflower oil

Preparation

  1. If squid is frozen defrost in fridge using package guidelines ready for cooking.
  2. Slice the squid pouches into 5mm thick rings.
  3. Blitz the olive oil and soft herbs until smooth. Season with a touch of salt.

Cooking Directions

  1. Preheat a saute pan on a medium high heat.
  2. Season the squid rings with salt and pepper, pour the oil into the pan then add the squid rings. Chef Tip: Do not over-crowd the pan as the pieces will stick together causing an uneven cooking time and poor presentation.
  3. Saute for 2-3 minutes then take the pan off the heat and add the herb oil.
  4. To serve divide the squid rings between four plates, spooning over the remaining herb oil.
  5. Chef Tip: You can use any mixture of fresh soft herb for the herb oil. Use the herbs you like best.
